I took a lot of inspiration from my crispy baked pesto chicken when creating this recipe. By poking small holes with a fork in the chicken, it allows the marinade to penetrate the chicken. Once the chicken goes on the grill, have the extra sauce you set aside ready to go. I was initially worried about putting that amount of oil in with the panko crumbs, but it turned out perfectly. This is now my favorite oven-fried chicken recipe!
